Made from the milk of pasture-raised Jersey cows in the mountains of southwest Virginia, Appalachian is a beautiful Alpine-style cheese; lightly cooked, pressed-curd, and aged for ninety days. It is semi-soft with a smooth, melts-in-your mouth texture and an earthy, grassy aroma illustrative of the mountainous pastures. The flavors are rich with buttery, lemony, and mushroomy notes.
