We all know Parmigiano Reggiano. Or at least, we think we do. But out of the more than three hundred fifty producers of Parmigiano Reggiano, this is one of only three that are a farmstead production, meaning that Bertinelli maintains control of the whole cheesemaking process, from herd to aged cheese. The difference is discernible.
